The Daily Pic offer - Evolution of the existing system

Daily Pic is the upscale fast-food concept created by Anne-Sophie Pic (Michelin-starred chef) to provide her customers with healthy, balanced, quality cuisine. Daily Pic offers various modes of consumption: on the spot, to be won or delivered to your company.

A complete zero-waste offer:
The verrines initially sent for recycling are now collected for re-use, enabling us to offer customers a zero-waste meal:

  • Glass jars for DailyPic products
  • Stainless steel cutlery, coffee cups and trays washed on site
  • Reusable glass beverage bottles
Objective: toorganize an efficient circuit for reusing the glass verrines used by DailyPic and packed in their central kitchen near Valence. Demonstrate the economic and environmental benefits of reuse versus recycling.

Collection

Glass jars are not returnable, collection depends on consumption method:

  • On site: trays are collected by team members.
  • Takeaway: customers are encouraged to take their verrines home with them, thanks to an incentive campaign.
  • Company delivery with post-consumer collection service.

The dirty glasses are stored in the stores' storerooms in storage boxes adapted for the collection of the dirty and the delivery of the clean; different boxes are used for the bottles.

Uzaje collects the cases from each store (pooling of flows) and sends them to the nearest carwash:

  • Washing at l'Haÿ les Roses (near Rungis) for Paris stores
  • Washing carried out at Chabeuil (Drôme) for Valence sites
The clean verrines are delivered to the Valence Central Kitchen for packaging and distribution in stores.

The impact of reuse

As part of the DailyPic project, the implementation of the reuse circuit has direct economic, environmental and social benefits:

Economic impact

  • Cost savings on new verrines and more regular supply management (reduced safety stock).
  • Consumers ready for re-use; a differentiating, high-quality offer and a loyalty-building tool.
  • Pasteurized glass jars have a long best-before date, which means less food waste and zero waste!

Environmental impact

  • Tens of tons of glass waste avoided at Daily Pic every year. Tens of thousands of cardboard boxes avoided thanks to collection boxes.
  • Up to 25% water savings and 3/4 energy savings thanks to washing versus recycling (ADEME data).
  • Reduce kilometers traveled: wash close to restaurants (opposite new glassware from Germany).

Social impact

  • Job creation in the ESS (Social and Solidarity Economy) structures of the wash centers.

Uzaje's added value to the project

  • Steering: preliminary launch discussions, project diagnosis, reflection on a collection model and wash logistics, analysis and measurement of economic, social and environmental impact.
  • Support: preparing, submitting and obtaining a grant to launch the project.
  • Packaging advice: sourcing and choice of collection crates optimized for the verrines' lifespan and ease of operation, thanks to our expertise in this field.
  • Expanding the offer: consideration of in-store beverage collection, and the development of secondary packaging adapted to BtoB delivery.
  • Technical and logistical: organization of the delivery/collection of the glasses and boxes according to the constraints (handling, TMS, process...), specifications of the washing service, identification & implementation of the partnership with a local actor in Valence.
  • Implementation of the offer: support and presence in store (consumer information), delivery of collection boxes, briefing of DailyPic team members, proposal of incentives to be implemented to encourage the return of the glasses.

DailyPic's opinion

Lilian ETIENNE, Daily Pic Business Unit Director: "Reuse was an obvious choice for our brand, which is totally committed to zero waste; it is beneficial for the environment and for our costs: it saves us money compared with buying new verrines, and enables us to manage supplies more regularly (reduction in safety stock)".
